Jerusalem artichokes are like dynamite for digestion, and for the uninitiated, your first experience with them may be somewhat explosive! But do persist, though, as this will settle down. They are very high in a compound called fructo oligo saccharide (FOS), and another one called inulin, which are both prebiotic compounds. This means that they work as a foodstuff for the ‘good’ bacteria in the gut. When these bacteria feed on them, they start to reproduce, making their numbers stronger. These good bacteria help regulate many aspects of digestive health, from regulating transit to repairing the gut wall, and even manufacturing certain nutrients.
