What are the health benefits of spinach? Spinach is a massive dietary staple for me. I love it with eggs for my breakfast, as a base to my lunchtime salad, or thrown in to a curry at teatime. It is awesome stuff!! Packed with beta carotene, and also a major source of vitamin C and iron. The vitamin C present helps with iron absorption. believe it or not, most fresh spinach contains more vitamin C than citrus fruit. Thats a pretty impressive start right there.
Spinach is packed with the potent fat-soluble antioxidant beta carotene. This usually gives plants a yellow/orange colour pigment. The sheer amount of chlorophyll in spinach (that makes it green) disguises the beta carotene that is in there. But, have you seen spinach that is starting to go on the turn? It starts to yellow doesn’t it? This is because the chlorophyll breaks down to reveal the beta carotene. Beta carotene is amazing for skin health because it is a fat soluble anti oxidant. This means that by its very nature it will rapidly diffuse into fatty tissues, such as the subcutaneous layer of the skin. When it accumulates there, it cam protect important structures such as collagen and elastin from damage.
Spinach, like any green vegetable is packed with the mineral magnesium. This is bound up within the chlorophyll of the plant. Magnesium aids in muscular relaxation, so can be a useful dietary addition for anyone who may be prone to cramp.
